A couple of weeks before the Asparagus festival I sent around some ideas I had, but in the end I prepared a salad and, since I couldn’t make it to this year’s festival, brought it instead to a Kentucky Derby party. It’s simple, colorful, and tasty.
2 part Asparagus 1 part Jicama 1 part Mango
slice into comparably sized junks or julienne (as best you can with a mango). Toss with capers and grapes, place on mixed greens, and dress with balsamic and oil (I used a fig vinegar, but might have preferred a white wine based one if I had had it.)
