Squished Egg Sandwiches

All this talk of Easter makes me think of a traditional family recipe I enjoy every year: Squished Egg Sandwidches.  While its not fancy, its always a winner for me:

Take hardboiled eggs (those that have been found, or cracked dyed ones that never made it out of the fridge) and peel into a large bowl.  The coloring of the eggs is to be appreciated for adding that special festive feel to this meal.  Mix in ample mayonnaise and small shrimp, taking care to crush and mix with caution; for me the ‘chunk’ size is critical to the success and represents a personal preference as important and unique as turkey-stuffing-bread-crumb-size.  Serve chilled on either hot toast, or simply curl up with someone special and a box of Ritz crackers.  Keep in mind however, that if you follow the recipe properly you WILL get crumbs in the bed.
